These vegan Soup Dumplings are super easy to make. Also they’re SUPER tasty and not any less delicious than their non-plant-based friends.

Part 1 - Colorful steamed dumplings dough
- 340g AP flour (divided in 2 parts for 2 different colors)
- 100g boiling hot water (divided in 2 parts for 2 different colors)
- 80g regular water (divided in 2 parts for 2 different colors)
- White food colorant
- Purple food colorant
Ingredients, you’ll need

- Premix white food colorant into 40g of regular water.
- Do the same for purple colorant. Set both aside.
- Take a medium-size bowl and mix together half of flour with half of boiling-hot water. Mix with chopsticks.
- As soon as the dough forms, add in one of the colored waters and mix.
- Work the dough just so all the flour incorporates.
- Wrap with a plastic wrap. Rest at room temp. for 30 min.
- Do the same for the other color.
Part 2 - Vegan soup dumplings filling
- 340g Cold vegetable stock
- 3g Agar Agar
- 4 Beyond Meat patties
- 1 onion
- 1/2 zucchini
- 30g Mirin wine
- 2-3 cloves Confit garlic
- 50g Roasted walnuts
- 30g Soy sauce
- 30g Shaoxing wine
- 10g Sesame oil

- Whisk Agar Agar powder into vegetable stock. Bring to boil, pour into shallow container and let it set at room temperature (or in the fridge).
- Meanwhile, defrost and break apart Beyond Meat patties.
- Brunoise an onion and sweat it out on low heat until translucent.
- Add in Mirin and reduce by half.
- Grate half a zucchini and add into the onion mix. Mix in and take off heat. Add to the Beyond Meat.
- Add in Confit garlic, roasted walnuts, soy sauce, Shaoxing wine and Sesame oil.
- Mix everything thoroughly and cool down the mix in the fridge.
- Once the vegetable broth gel set and you are ready for the dumpling assembly, break the gel into medium-size cubes and mix into the filling.
Part 3 - Floral dumpling assembly
- White dumpling dough
- Purple dumpling dough
- Soup dumpling filling

- Roll out both doughs to 3 mm thickness.
- Use a cookie cutter to cut out 8cm and 5cm circles (different colors – different sizes).
- Place the smaller circle on top of the large circle and roll out again to 3-2 mm thickness.
- Assemble as per DEMO in the video.
- Steam for 7-10 min.
